This is a super simple recipe I threw together for a weeknight meal. I originally used frozen Brussels sprouts, using the YardBird rub to doctor it up a bit and the results were fantastic! It works even better utilizing fresh sprouts.

brussels sprouts

Ingredients:

1-1.5 lb fresh brussels sprouts, cleaned, trimmed and halved (1 package frozen sprouts works just as good! These I left whole)
1 medium shallot, sliced thin
3 cloves minced garlic
1-2 tsp honey, depends how sweet you like it
2 Tbsp butter
2 tsp PlowBoys YardBird rub
Splash of olive or vegetable oil

Heat a cast iron or heavy bottom pan over medium heat. In the meantime, clean and trim sprouts, slice shallots and mince garlic cloves. Add your splash of oil, enough to cover the surface of the pan. Throw in your sprouts, let them char a bit before stirring. Stir once or twice, cook 5-7 minutes depending on your pan.
Add your honey and butter. Adjust heat to low after 1 minute or when butter is melted and mixture has begun to reduce.

Throw in your shallots, garlic and rub to coat. Cook 30 seconds to a minute, stirring and taking care not to burn the garlic.
Remove from heat and serve!
Cooking times may vary depending on your stovetop and pan. Feel free to add more rub to your own taste!
